Founded in 2020, Papole Foods was born out of necessity and love—crafted by a family determined to bring back joy to gluten-free eating. What started as a personal quest for delicious, Celiac-safe comfort food quickly grew into a local favorite. Every Papole dish reflects our belief: just because it’s gluten-free doesn’t mean it has to taste like it.

For every Empanoli – we weigh out two dough balls, which are pressed flat using a tortilla press, filled, and sealed by hand—because machines can’t taste. We source real ingredients, never mess with additives, and keep it tight with bold flavors. We treat every batch like it’s going on your grandma’s table (but way more fun).

Forget what you thought gluten-free pastry could be. Our Empanolis go way beyond “delicious”—they’re crispy, stuffed, and downright addictive. Half empanada, half ravioli, all attitude. Every single one is handmade in Chicago and Celiac-safe, because flavor should never come with a side of compromise.

BETTER THAN MOM’S
Founder Alex used his mother’s fried Mexican picadillo beef empanadas as his gold standard and inspiration based on a 50+ year-old recipe. He worked for three years on perfecting The Original Empanoli’s signature butter crust, which is baked, never fried, and of course gluten-free.
